At the Caliscana table, the owner himself, Roberto Crea, poured nine wines, starting with two vintages, 2005 and 2006 Fior Fiore Ansonica, a fresh white wine with intense, floral perfume produced with the native vine of the same name (Ansonica). This grape variety is typical of the Tuscan Islands, such as Isola d'Elba and Isola del Giglio, as well as along the mainland coast in the Maremma area. The grape is cultivated also in Sicily, where it is called Inzolia which, in local dialect, means 'island'.
The other seven wines included 2004 and 2005 Sangiovese, 2004 and 2005 Merlot, and 2005 Cabernet Sauvignon, plus the Super-Tuscan 'Occidental' 2004 , a blend of 70% Cabernet Sauvignon, 20% Sangiovese and 10% Merlot grapes cultivated on the hills surrounding Capalbio, and the 2004 Polyphemus, made with select Cabernet Sauvignon grapes harvested late and fermented at controlled temperature (30°C., or 86°F.), in stainless steel vats.

Jeanneth Angel, who cared for the Tenuta La Carlina table, poured the Super-Tuscan Barengo, the 2005 Rosso di Montalcino, and the recently released Brunello di Montalcino La Togata DOCG 2002 and the wine that many judged as best-of-show, the 2001 Brunello di Montalcino La Togata Riserva, which recently was assigned 96 points by the Wine Spectator magazine.
